Pav Bhaji

Indian Street Food consisting of spicy vegetable mash and soft buttery buns

Instructions

  • Pressure cook Potatoes (3), Cauliflower (1/4) and Peas till it is well cooked. Mash the vegetables.
  • In a wide pan, heat butter (the more the better)
  • Add finely chopped onions (3) till translucent. Add finely chopped Capsicum (1)
  • Add ground Ginger and Green Chilies (2 tsp). Add Chili Powder (1 tsp) and Pau Badji Masala Powder (3 tsp).
  • Add finely chopped tomatoes (4) or a tin of Tomatoes
  • Fry till it is well mashed up
  • Add cooked vegetables. Cook for a further 15 minutes
  • Add lemon Juice if required
  • Heat another pan and add butter. Place 1/2 a burger bun and cook till it is well toasted.
  • Remove and put Pau Badji Masala. Top with finely chopped red onions and garnish with a slice of lemon
