Mexican Vegetable Chili
Vegetarian Chili with Tacos
Mexican style vegetable snack or meal served with various topings
Instructions
- Heat a pan and add oil. Add chopped Red onion (1), Celery(2), Red Capsicum(1), Carrots (2) and salt. Cook for about 5-10 minutes
- Add chopped garlic (4), Chili powder, cumin (2 tsp), paprika (1 tsp), oregano, chopped green chilies. Cook for about a minute
- Add chopped tomatoes (1 tin), drained black beans drained pinto beans or kidney beans, vegetable broth, bay leaf (1). Cook for about 30 minutes
- Optional to blend 1/2 cup of the chili. Add chopped cilantro and add sherry vinegar (1-2 tsp) or lime juice.
- Serve with Tortilla chips, sour creme or creme fraiche, grated cheddar, avocado, lettuce
