Tomato Thoku (Pickle)

Tomato Thoku (Chutney) best served with Yogurt Rice, Chapathi, Idly or Dosa

Instructions

  • In a pan, add Mustard Seeds (1/2 tsp), Fenugreek Seeds (1/2 tsp), Cumin Seeds (1/2 tsp). Fry for a couple of seconds and remove. Grind it in a mortar and pestle. Set aside
  • Blend Tomatoes (10) with little Tamarind.
  • Cook the Tomatoes in a pan. Cover with lid and cook slowly till it thickens.
  • Add Turmeric Powder (1 tsp), Chilli Powder (1 tsp). Remove
  • In another pan add sliced Garlic Pieces (4), Dried Red Chillies (3), Mustard Seeds (1/2 tsp) and Asofetida (pinch). Fry for a couple of minutes.
  • Add the Cooked Tomato paste. Add Salt and Sugar
  • Cook till mixture is thick like a pickle. Add more oil if needed.
  • Cool and store in an airtight container
