Vadai Curry

Fried or Steamed Vadai in Masala best served with Dosa

Instructions

Vadai

  • Soak Chana Dal (250g) for about 2 hours. Wash and Drain water
  • Grind the above Dal with Rice (3 Tbsp), Fennel (2 tsp), Ginger-Garlic paste (2 tsp)
  • Add Finely cut Green Chillies (2) and Onions (5), Salt to the above ground mix
  • Make into small balls. Deep fry or Steam them

Coconut Paste

  • Grind Coconut (5 tbsp), Cashew Nuts (3), Yogurt (2 tsp)

Masala

  • Heat oil in a pan
  • Add Fennel (1 tsp), Cinnamon, Bay Leaves (2), Star Anise (1), Curry Leaves
  • Add Finely Chopped Onions (5/6). Fry for a couple of minutes till it softens
  • Add Ginger-Garlic paste (2 tsp). Fry for a couple of minutes
  • Add Finely cut Tomato (1). Fry for a couple of minutes
  • Add Coriander Powder (1 tsp), Chilli Powder (1 tsp), Turmeric Powder (1 tsp)
  • Add little water and cook for about 10 minutes
  • Add the above coconut mixture. Boil for a few minutes
  • Add the vadai (break into pieces) and fennel seed powder (1 tsp)
  • Cook for further 5 minutes
