Roti Canai (Paratha)

Instructions

  • Mix 3.5 cups of Maida (Plain flour from Indian shops), salt (1 tsp) and sugar (1 tsp)
  • Add Egg (1), Milk (1/2 cup), Condensed Milk (1 tsp), Water (1/2 cup)
  • Knead for about 15 to 20 minutes till soft
  • Rest for 5 minutes
  • Knead for another 5 to 10 minutes
  • Divide into 8 balls
  • Put the dough into a big bowl covered with oil so it doesn't dry out
  • Leave it in the fridge overnight or rest for at least a couple of hours
  • Next day, take the bowl out from the fridge for about 30 minutes.
  • Oil the table slightly. Use your palm to spread each dough into a circular shape until it is really thin. You can try flipping it
  • Then fold it into thirds and gather it together to make a line. Swirl it around to make into a coil.
  • Pat it down again to a circular shape
  • Place it in a hot pan and cook till Paratha is done.
  • Remove the Paratha from heat and Squash it together.
  • Enjoy with Malaysian Chicken Curry.
