Egg Jam spread served with hot toast – famous in Singapore
Instructions
Mixture #1
- Whisk eggs (5) and Sugar (250g) into a bowl. (Don't lift whisk up because you don't want air to fold in)
- Add in Coconut Cream (200g) and Pandan Leaves (5 tied into a knot)
- Put this bowl into hotboiling water and continue mixing until desired consistency. (make sure egg does not get scrambled)
Mixture #2
- For the caramel, add Sugar (50g) and butter (100g) onto a hot pan. Cook till brown
Final Mixture
- Add Caramel mixture into Mixture #1
- Add pinch of salt to taste
