Egg Jam spread served with hot toast - famous in Singapore

Instructions

Mixture #1

  • Whisk eggs (5) and Sugar (250g) into a bowl. (Don't lift whisk up because you don't want air to fold in)
  • Add in Coconut Cream (200g) and Pandan Leaves (5 tied into a knot)
  • Put this bowl into hotboiling water and continue mixing until desired consistency. (make sure egg does not get scrambled)

Mixture #2

  • For the caramel, add Sugar (50g) and butter (100g) onto a hot pan. Cook till brown

Final Mixture

  • Add Caramel mixture into Mixture #1
  • Add pinch of salt to taste
