Brinjal Kosthu
Brinjal and Potato thick masala best served with Chapathi, Dosa or Idly
Instructions
- Heat Oil in a pan and add Mustard Seeds and Urid Dal
- Add chopped Small Onions and Curry Leaves
- Add Ginger-Garlic paste and Tomatoes
- Add finely cut Brinjal
- Add boiled Potatoes
- Add Coconut and Fennel Paste. Cook for a couple of minutes
- Garnish with Coriander Leaves
