Brinjal Kosthu

Brinjal and Potato thick masala best served with Chapathi, Dosa or Idly

Instructions

  • Heat Oil in a pan and add Mustard Seeds and Urid Dal
  • Add chopped Small Onions and Curry Leaves
  • Add Ginger-Garlic paste and Tomatoes
  • Add finely cut Brinjal
  • Add boiled Potatoes
  • Add Coconut and Fennel Paste. Cook for a couple of minutes
  • Garnish with Coriander Leaves
