Brinjal and Potato thick masala best served with Chapathi, Dosa or Idly

Heat Oil in a pan and add Mustard Seeds and Urid Dal
Add chopped Small Onions and Curry Leaves
Add Ginger-Garlic paste and Tomatoes
Add finely cut Brinjal
Add boiled Potatoes
Add Coconut and Fennel Paste. Cook for a couple of minutes
Garnish with Coriander Leaves
