Thai Sticky Rice with Mango and Coconut

Sticky pudding made with coconut milk and can be served hot or cold

Instructions

  • Soak Thai Black Rice (500g) overnight
  • Pressure cook Rice till it is well cooked. Add little golden sugar (Optional)
  • Heat Coconut Milk (1 can) and Condensed Milk (1/2 can) in a pan and boil
  • Just before serving, add half the milk mixture with the rice and mix thoroughly
  • Pour the remaining mixture into a jug to serve with the dessert
  • Serve the rice with mango slices and drizzle with remaining milk mixture.
  • Add Shaved Ice (optional) and Vanilla Ice-Cream (optional)
  • Top with toasted sesame seeds (optional)

Notes

If you want it hot, omit the mango and ice-cream. Add the whole milk mixture to the rice and serve hot
