Cranberry Orange Cake

Instructions

  • Preheat Oven to 180 degrees
  • Mix Room temperature Butter (1/2 cup) for one minute in high speed. Add Granulated Sugar (1/2 cup), Light/Dark Brown Sugar (1/4 cup). Whisk for 2 full minutes till it is creamy
  • Add Large Eggs (2), Flavoured Coconut Yogurt (1/2 cup) or Sour Cream, Vanilla Extract (2 tsp). Whisk for a further 2 mins
  • Take a separate bowl and mix the below:
    All Purpose Flour (1 and 3/4 cup), Baking Soda (1 tsp), Baking Powder (1 tsp), Cinnamon (1/2 tsp), Salt (1/2 tsp)
  • Add the wet mixture slowly to the dry mixture. Add Orange Juice (2 tbsp) and Milk (2 tbsp)
  • Fold Cranberries (1 and 1/2 cups) into the mix
  • Bake for 25 minutes
  • Glaze after cake has cooked with the below mix:
    Sugar (1 cup) and Orange Juice (3 tbsp)
