Lemon Coconut Cake

Instructions

Sponge

  • Whisk butter (100g), caster sugar (1/2 cup)
  • Then add egg (1)
  • Add Plain Flour (3/4 cup), desiccated coconut (1/4 cup). Mix with wooden spoon
  • Bake on180 degrees for about 15 mins

Lemon Curd

  • Heat butter (50g), caster sugar (1/2 cup), egg (1 whisked), Lemon Rind (2 tsp), Lemon Juice (1/4 cup). Heat till it thickens

Coconut Topping

  • Whisk eggs (2), caster sugar (1/2 cup)
  • Add fresh shredded coconut (2 cups), desiccated coconut (1 cup)

Cake

  • Add Lemon Curd topping on the sponge and top with the coconut. Bake for a further 25 minutes in oven.
