Lemon Coconut Cake
sponge cake made with lemon curd and coconut
Instructions
Sponge
- Whisk butter (100g), caster sugar (1/2 cup)
- Then add egg (1)
- Add Plain Flour (3/4 cup), desiccated coconut (1/4 cup). Mix with wooden spoon
- Bake on180 degrees for about 15 mins
Lemon Curd
- Heat butter (50g), caster sugar (1/2 cup), egg (1 whisked), Lemon Rind (2 tsp), Lemon Juice (1/4 cup). Heat till it thickens
Coconut Topping
- Whisk eggs (2), caster sugar (1/2 cup)
- Add fresh shredded coconut (2 cups), desiccated coconut (1 cup)
Cake
- Add Lemon Curd topping on the sponge and top with the coconut. Bake for a further 25 minutes in oven.
