Lemon Coconut Cake
sponge cake made with lemon curd and coconut

Sponge
Whisk butter (100g), caster sugar (1/2 cup)
Then add egg (1)
Add Plain Flour (3/4 cup), desiccated coconut (1/4 cup). Mix with wooden spoon
Bake on180 degrees for about 15 mins
Lemon Curd
Heat butter (50g), caster sugar (1/2 cup), egg (1 whisked), Lemon Rind (2 tsp), Lemon Juice (1/4 cup). Heat till it thickens
Coconut Topping
Whisk eggs (2), caster sugar (1/2 cup)
Add fresh shredded coconut (2 cups), desiccated coconut (1 cup)
