Bawa Biryani
Spicy Low fat Mutton or Chicken Biryani which is super easy to make.
Instructions
- Grind Ginger (2 inch), Garlic (6), Cinnamon Sticks (2), Cardamom (8), Cloves (12), Chilli Powder (2 tsp), Turmeric Powder (1 tsp), Coriander Leaves (1 bunch), Small Onions (1), Tomatoes (3), Green Chillies (5). Set Aside
- In a pressure cooker, heat oil and Add Bay Leaves (5), Star Anise (2). Add Sliced Onions (3). Cook till it is brown. Add Mint Leaves (handful)
- Add the ground masala, Yogurt (1 cup) and Salt. Cook for a couple of minutes.
- Add Mutton Pieces (1 kg). Add water. Cover and cook. Wait for 1 whistle. Remove from heat
- Add lemon juice
- Remove the liquid. Add Washed Basmati rice (3 cups) to the mutton in the pressure cooker
- Measure the liquid and add it to the Rice and Mutton mixture. Add about 6 cups of the liquid. Keep any extra aside to have with the final dish
- Taste for salt. Cover with a plate and cook till Rice is nice and fluffy
- Serve with the extra masala liquid and Onion Raita
