Sweet Potato and Black Bean Burger

Healthy Vegetarian Patties eaten in a Burger with Mushrooms, Onions, Tomatoes and Gherkins

Instructions

Vegetable Patties

  • Cook Sweet Potatoes (2) in Microwave till soft. Mash it and set aside
  • Rinse and Drain canned Black Beans (1 can). Partially mash the Beans (leave some whole). Set Aside
  • Add dehyradated Soya chunks in boiling water and leave it for 10 minutes till double in size. Drain to remove excess water. Mince the Soya. Set Aside (This is optional. It adds texture to the burger)
  • Cook finely chopped Onion (1) till soft.
  • Add Paprika (2 tsp), Cumin powder (1 tsp), Garlic Powder (1 tsp), Mixed Herbs (2 tsp), Salt
  • Add the Sweet Potatoes and Black Beans to the Onion mixture.
  • Add Breadcrumbs. Mix well and taste. Add Lemon juice if required.
  • Make them into patties.
  • Pan fry the Patties. Set Aside

Mushroom

  • Mix Soya Sauce, Maple Syrup, Rice wine Vinegar, Lemon Juice
  • Marinate Portobello Mushrooms in the above sauce
  • Pan fry the Mushrooms and Set Aside

Burger

  • Slice Brioche Bun into 2 and Toast in a pan
  • Remove the Bun and spread Mayonnaise and Chilli Sauce. Place the Patties and Mushroom. Serve with sliced Red Onions, Tomatoes, Lettuce and Gherkins
