Cake with Mixed Fruits and Pineapple
Instructions
- Soak Mixed Dried Fruit (375g) in Pineapple Juice (from tin) overnight. This is an optional step
- Boil the above Dried Fruit, Pineapple Crushed from tin (450g), brown sugar (200g), Butter (125g), Mixed Spice (1 tsp) for 10 minutes. Cool
- In a bowl, add Beaten eggs (2), Self Raising Flour (150g), Plain Flour (150g), bicorbanate of soda (1 tsp), salt and the above fruit mix.
- Bake for 1.5 hours to 2 hours at 180 degrees
