Soak Mixed Dried Fruit (375g) in Pineapple Juice (from tin) overnight. This is an optional step
Boil the above Dried Fruit, Pineapple Crushed from tin (450g), brown sugar (200g), Butter (125g), Mixed Spice (1 tsp) for 10 minutes. Cool
In a bowl, add Beaten eggs (2), Self Raising Flour (150g), Plain Flour (150g), bicorbanate of soda (1 tsp), salt and the above fruit mix.
Bake for 1.5 hours to 2 hours at 180 degrees
