Instructions

Thai Paste

  • Chop Shallots (3), Garlic (3), Lemon Grass (2)
  • Heat Pan. Add Coriander Seeds (1 tbsp), Cumin Seeds (1 tsp) – Dry Roast
  • Grind all of the above with Pepper (1 tsp), Dried Red Chillies (10), Chopped Coriander Root (1 tbsp), Galangal or Ginger (1 tbsp), Grated Lime (2 tsp), Tomato Puree, Lime Juice

Curry

  • Fry Paste in Oil
  • Reduce Heat. Add Coconut Milk
  • Add Chicken or Prawn or Vegetables (aubergine, courgette, Capsicum, pak choy)
  • Add chopped Kaffir Leaves (5-6), basil leaves, fish sauce (2 tbsp), Palm sugar (1 tbsp)
