Lebanese Meal
Combination of Roast Chicken, Aubergine, Falafel and Hummus
Instructions
Roast Chicken
- Mix Harissa Paste (3 tbsp), Ground Cumin (2 tsp), Salt, Ground Coriander (1 tsp), Cinnamon (1 tsp), Paprika (2 tsp), Chilli Powder (1 tsp), Olive Oil, Lemon Juice, Black Pepper. Marinate Chicken with Paste and leave it for at least 2 hours or overnight
- Roast it in Oven till it is well cooked
Hummus
- Mix Hummus, Lemon Juice, Paprika and little Olive Oil
Yogurt
- Mix Yogurt, Harissa Paste, Parsley and little Olive Oil
Salad
- Mix finely chopped Tomatoes, Red Onion, Green chillies (optional), Cucumber with Mint leaves, lemon juice, salt and pepper
Cous Cous
- Mix Cooked Cous Cous with lemon juice and finely chopped green chillies
Assemble
- Add all the above in a plate and server with Promeganate, Falafel and Flat Bread
